The combination of Velveeta, cream cheese, and cheddar creates an ultra-creamy sauce that coats every bite of pasta beautifully.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 (16-ounce) package spaghetti
  • 1 (10-ounce) can Ro*Tel tomatoes
  • 2 (10.5-ounce) cans cream of mushroom soup
  • 1 (16-ounce) package Velveeta cheese
  • 4 ounces cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Place the chicken breasts in a large pot and cover with water.
  2. Cook over medium-low heat until the chicken is fully cooked through.
  3. Remove the chicken and allow it to cool slightly.
  4. Shred the chicken using two forks.
  5. Preheat the oven to 350°F.
  6. Lightly grease a 13×9-inch baking dish with nonstick cooking spray.
  7. Cook the spaghetti according to package directions until al dente.
  8. Drain the spaghetti and set aside.
  9. In a large pot, combine the undrained Ro*Tel tomatoes, cream of mushroom soup, Velveeta cheese, and cream cheese.
  10. Heat over low heat while stirring constantly until the cheeses are melted and smooth.
  11. Stir in the garlic powder and onion powder.
  12. Add the shredded chicken and cooked spaghetti to the cheese mixture.
  13. Mix everything together until evenly coated.
  14. Pour the mixture into the prepared baking dish.
  15. Sprinkle the shredded cheddar cheese evenly over the top.
  16. Bake for 20 to 30 minutes until hot and bubbly and the cheese is melted.
  17. Serve warm.
