Description
Texas Turtle Sheet Cake is a rich, chocolatey dessert topped with smooth chocolate frosting, crunchy pecans, sweet caramel, and chocolate chips. This easy cake comes together in just 30 minutes, making it perfect for parties, potlucks, holidays, and family gatherings
Ingredients
For the Chocolate Cake
- 2 cups (400 g) granulated sugar
- 2 cups (256 g) self-rising flour
- 1 cup (227 g) unsalted butter, at room temperature
- 1 cup (237 ml) coffee or hot water
- ⅓ cup (39 g) unsweetened cocoa powder
- ½ cup (120 g) buttermilk
- 2 large eggs, at room temperature
For the Chocolate Frosting
- ¼ cup (57 g) butter
- ¼ cup (60 g) buttermilk
- 3 tablespoons (22 g) unsweetened cocoa powder
- 2½ cups (312 g) confectioners’ sugar
For the Turtle Topping
- ½ cup chopped pecans
- ½ cup semisweet chocolate chips
- ½ cup caramel sauce, for drizzling
Instructions
- Preheat the oven to 350°F (175°C). Line a 10 × 15-inch baking pan with parchment paper and lightly grease the sides. You can also use a 9 × 13-inch pan for a thicker cake.
- In a large mixing bowl, combine the self-rising flour and granulated sugar. Set aside.
- In a saucepan, combine the butter, coffee or hot water, and cocoa powder. Bring the mixture to a gentle rolling boil over medium heat, stirring constantly.
- Pour the warm chocolate mixture into the flour and sugar mixture. Mix with a hand mixer or whisk until everything is combined.
- Add the buttermilk and eggs. Mix for about 30 seconds, or until the batter is smooth.
- Pour the batter into the prepared pan and bake for 20–25 minutes. Begin checking at 17 minutes. The cake is ready when it springs back lightly and a toothpick inserted into the center comes out with a few moist crumbs.
- While the cake bakes, prepare the frosting. Combine the butter, buttermilk, and cocoa powder in a saucepan.
- Bring the mixture to a gentle boil over medium heat, stirring continuously.
- Remove from the heat and gradually whisk in the confectioners’ sugar, adding about ½ cup at a time until smooth.
- Pour or spread the warm frosting over the freshly baked cake.
- Sprinkle the chopped pecans and chocolate chips over the frosting while it is still warm.
- Drizzle the caramel sauce generously over the top. Allow the cake to cool enough for the frosting to set before slicing and serving.
Notes
- Serving: Cut into squares and serve at room temperature. Pair with vanilla ice cream, whipped cream, or a cup of coffee.
- For parties: Prepare the cake in a rectangular pan so it is easy to slice into portions for potlucks, birthdays, and family celebrations.
- Room temperature storage: Store covered for up to 2 days in a cool environment, provided the frosting and toppings are suitable for room-temperature storage.
- Refrigerator storage: Keep the cake in an airtight container in the refrigerator for up to 5 days. Let slices sit at room temperature briefly before serving for a softer texture.
- Freezing: Freeze individual slices without additional fresh toppings in a freezer-safe container for up to 2–3 months. Thaw overnight in the refrigerator.
- Make-ahead tip: Bake the cake a day ahead and add the caramel drizzle shortly before serving for an attractive finish.
- Prevent dryness: Avoid overbaking. Start checking the cake early because a thinner sheet cake cooks quickly.
- Easy slicing: Allow the frosting to set slightly and use a sharp knife, wiping it clean between cuts for neat squares.
