Description
This Crockpot Chicken and Stuffing is the ultimate easy comfort-food dinner. With tender chicken thighs, savory stuffing, vegetables, and simple seasonings, it takes just minutes to prepare before the slow cooker does the work.
Ingredients
- 12 ounces Stove Top stuffing mix
- 1 ½ cups chicken stock
- ¼ cup melted butter
- 10 ounces frozen vegetables
- 1 tablespoon olive oil
- 8–10 skinless chicken thighs
- 1 ½ tablespoons chicken seasoning
- 1 teaspoon paprika
- Nonstick cooking spray
Instructions
- Spray the inside of the slow cooker with nonstick cooking spray.
- Add the stuffing mix to a large mixing bowl.
- Pour in the chicken stock and melted butter, then stir until well combined.
- Add the frozen vegetables and mix until evenly distributed.
- Spoon the stuffing mixture into the prepared slow cooker.
- Place the chicken thighs in a large bowl or zip-top bag.
- Drizzle the chicken with olive oil and toss to coat.
- Sprinkle the chicken seasoning over the thighs and coat evenly.
- Arrange the seasoned chicken thighs over the stuffing mixture.
- Sprinkle the paprika over the chicken.
- Cover the slow cooker with the lid.
- Cook on LOW for 8–10 hours, or until the chicken is tender and fully cooked.
- Serve the chicken with plenty of the flavorful stuffing and vegetables.
Notes
- Serve with green beans, roasted carrots, mashed potatoes, or a simple side salad.
- Spoon some of the stuffing onto each plate before adding the chicken for a complete meal.
- Add a little chicken gravy over the top for extra flavor.
- Allow leftovers to cool before storing them.
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
- Reheat individual portions in the microwave until heated through.
- You can also reheat leftovers in a covered oven-safe dish until warm.
- For longer storage, freeze cooled portions in freezer-safe containers for up to 2–3 months.
- Thaw frozen leftovers in the refrigerator before reheating.
