Description

Strawberry Shortcake Scones are soft, flaky bakery-style scones filled with fresh juicy strawberries and finished with a sweet vanilla glaze. Ingredients

  • 2 cups all-purpose flour, spooned and leveled
  • 1 tablespoon baking powder
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 10 small strawberries, hulled and finely diced
  • 3/4 cup half and half

For the glaze

  • 2 cups powdered sugar
  • 1/4 cup half and half
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400Β°F and line a baking sheet with parchment paper
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt
  3. Cut in cold butter using a pastry cutter or fingers until mixture becomes crumbly
  4. Gently toss in diced strawberries until coated with flour mixture
  5. Pour in half and half and mix lightly until a soft dough forms
  6. Turn dough onto a floured surface and gently pat into a 1-inch thick circle or rectangle
  7. Cut into 6 to 8 triangle-shaped scones
  8. Place on baking sheet and bake for 16 to 18 minutes until golden and cooked through
  9. Transfer to a cooling rack and cool for about 10 minutes
  10. Mix glaze ingredients until smooth and adjust thickness if needed
  11. Dip or drizzle glaze over cooled scones and allow it to set before serving
