Ingredients

  • ⅓ cup heavy whipping cream

Strawberry Topping:

 

  • 1 lb strawberries, thinly sliced or chopped
  • ¾ cup cold strawberry juice (or another red juice), divided
  • 1 package unflavored gelatin (7g)
  • ½ cup strawberry jam

Instructions

Preheat Oven and Blind Bake Crust:

  1. Preheat the oven to 425 degrees F and press the pie crust into a 9″ pie plate. Crimp the edges as desired.
  2. Blind bake the crust until light golden brown, then set aside to cool to room temperature on a wire rack.

Prepare Cream Cheese Filling:

  1. Beat cream cheese until smooth.
  2. Add vanilla and powdered sugar, beat until smooth.
  3. Incorporate heavy whipping cream until thick and fluffy. Set aside.

Prepare Strawberry Topping:

  1. Sprinkle gelatin over cold juice and set aside.
  2. Heat remaining juice and jam, then whisk into gelatin until dissolved. Let cool to room temperature.

Assembly: Bringing It All Together

  1. Spread cream cheese filling into the cooled pie crust.
  2. Top with strawberries, then pour cooled gelatin mixture over strawberries.
  3. Refrigerate until set, then serve with whipped cream if desired.
