Description

This Stovetop Creamy Macaroni & Cheese is a rich, comforting meal that comes together in just 20 minutes. Made with a smooth homemade cheese sauce and tender pasta shells, it’s the perfect side dish or quick family dinner that’s far better than any boxed version.

 


Ingredients

  • ½ lb uncooked shells or other short pasta
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1½ cups milk (2% or whole milk)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of red pepper flakes
  • 1½ cups shredded sharp cheddar cheese
  • ½ cup shredded three-cheese blend

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package directions until tender.
  3. Drain the pasta and set aside.
  4. In the same pot, melt the butter over medium-high heat.
  5. Whisk in the flour one tablespoon at a time until smooth.
  6. Cook the roux until lightly golden and no longer tastes raw.
  7. Slowly whisk in the milk.
  8. Continue stirring until the sauce thickens.
  9. Season with salt, black pepper, and red pepper flakes.
  10. Remove the pot from the heat.
  11. Stir in the cheddar cheese and three-cheese blend until completely melted.
  12. Add the cooked pasta to the cheese sauce.
  13. Stir until the pasta is evenly coated.
  14. Serve immediately while hot.

  • Pair with grilled chicken, steak, or roasted vegetables.
  • Sprinkle extra shredded cheese on top before serving.
