Ingredients
- 2 cups coconut milk, well shaken
- ½ cup cream of coconut

- 2 cups white cranberry juice, chilled
- 3 cups lemon-lime soda, chilled
- 1 teaspoon vanilla extract
- 2 cups ice, or as needed
- ½ cup shredded coconut, for garnish

- ½ cup fresh cranberries, optional garnish
- 6–8 fresh rosemary sprigs, optional garnish
Instructions
- Shake the coconut milk well and pour it into a large pitcher or punch bowl.
- Add the cream of coconut and vanilla extract. Whisk until smooth and creamy.
- Pour in the chilled pineapple juice and white cranberry juice.
- Stir gently until all the ingredients are well combined.
- Taste the punch base and adjust the sweetness or coconut flavor if needed.
- Cover and refrigerate until thoroughly chilled.
- Just before serving, gently stir the punch base and slowly add the chilled lemon-lime soda.
- Stir lightly to preserve the bubbles and carbonation.
- To decorate the glasses, lightly moisten their rims with pineapple juice and dip them into shredded coconut.
- Add ice to each glass and pour in the prepared punch.
- Garnish with whipped topping, shredded coconut, fresh cranberries, or rosemary sprigs.
- Serve immediately while cold and sparkling.
Notes
- Serve chilled: Keep all juices, coconut milk, and soda refrigerated before preparing the punch.
- Decorate the glasses: Dip the rims in pineapple juice and shredded coconut for a beautiful snowy appearance.
- Christmas presentation: Add fresh cranberries and rosemary sprigs to create a festive red-and-green contrast.
- Keep it fizzy: Add the lemon-lime soda just before serving to preserve its carbonation.
- Make ahead: Prepare the coconut, pineapple, and cranberry mixture several hours in advance. Refrigerate it until party time.
- Refrigerator storage: Store leftover punch in a covered pitcher in the refrigerator and enjoy within 1–2 days. The soda will gradually lose its bubbles.
- Store the base separately: For the best results, refrigerate the punch base without ice or soda and add both when serving.
- Avoid watery punch: Add ice directly to individual glasses instead of the main punch bowl.
- Stir before serving: Coconut milk and cream of coconut may separate slightly, so gently stir the base before pouring.
