Description
Slow Cooker Chicken Cacciatore is a comforting Italian-inspired dinner made with tender chicken thighs, colorful bell peppers, tomatoes, garlic, and herbs. It’s an easy, flavorful meal that comes together with minimal effort.
Ingredients
- 4 boneless, skinless chicken thighs
- 1 medium onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon crushed red pepper flakes, optional
- Salt and freshly ground black pepper, to taste
- Fresh chopped parsley, for garnish
Instructions
- Arrange the chicken thighs in a single layer in the bottom of the slow cooker.
- Add the sliced onion, red bell pepper, green bell pepper, and minced garlic over the chicken.
- Pour in the diced tomatoes and chicken broth.
- Stir in the tomato paste until incorporated into the liquid.
- Sprinkle in the oregano, basil, and crushed red pepper flakes if using.
- Season everything with salt and freshly ground black pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and easily shreds.
- Shred the chicken directly in the slow cooker using two forks.
- Stir the shredded chicken into the tomato and vegetable sauce.
- Garnish with fresh parsley and serve warm over pasta, rice, or with crusty bread.
Notes
Serve Chicken Cacciatore over spaghetti, linguine, rice, mashed potatoes, or polenta. Crusty bread is also perfect for soaking up the flavorful tomato sauce. For extra freshness, sprinkle chopped parsley over each serving.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat gently on the stovetop or in the microwave until heated through. The chicken and sauce can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
