This recipe combines tender russet potatoes, seasoned ground beef, onions, and melted cheese, all slow-cooked to perfection. It’s a satisfying meal that requires minimal effort but delivers maximum flavor and comfort.

Ingredients

  • 2 pounds ground beef
  • 3 pounds russet potatoes, peeled and sliced 1/4 inch thick (about 7 cups total sliced)
  • 1 cup thinly sliced onion
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cups shredded sharp cheese (such as cheddar)
  • 3/4 cup beef broth
  • 1 can (10.75 oz) condensed cheddar cheese soup

Instructions

1. Prepare the Ingredients:

  1. Start by browning the ground beef in a skillet over medium-high heat until fully cooked. Drain any excess fat and set aside.

2. Layer the Ingredients in the Slow Cooker:

  1. In a small bowl, combine paprika, garlic powder, salt, and black pepper.
  2. Layer half of the sliced potatoes in the bottom of your slow cooker.
  3. Spread half of the condensed cheddar cheese soup over the potatoes.
  4. Sprinkle half of the sliced onions, half of the seasoning mixture, half of the cooked ground beef, and half of the shredded cheese over the potatoes and soup.
  5. Repeat the layers with the remaining potatoes, onions, seasoning, ground beef, and shredded cheese.

3. Cook the Au Gratin:

  1. Drizzle the beef broth evenly over the top of the layers in the slow cooker.
  2. Cover and cook on high heat for 4 hours, or until the potatoes are tender and cooked through.

4. Serve:

  1. Once cooked, serve the Slow Cooker Beef and Potato Au Gratin directly from the slow cooker. Scoop out generous portions onto plates and enjoy this comforting dish with your favorite side salad or vegetable.

Benefits of Slow Cooking:

  1. Flavor Infusion: Slow cooking allows flavors to meld together, creating a rich and savory dish.
  2. Convenience: Set it and forget it! Perfect for busy days or when you want a hands-off cooking experience.
  3. Tender Texture: Slow cooking ensures that both the beef and potatoes become tender and melt-in-your-mouth delicious.

Notes

Serving Tips:

  1. Garnish Creatively: Sprinkle freshly chopped parsley or chives over the au gratin just before serving to add a pop of color and freshness.
  2. Pairing Suggestions: Serve alongside a crisp green salad dressed with vinaigrette or steamed vegetables for a balanced meal.
  3. Bread on the Side: Warm crusty bread or dinner rolls complement the hearty flavors of the au gratin and are perfect for soaking up the savory sauce.
  4. Individual Portions: Use a large spoon to scoop out individual portions directly from the slow cooker onto plates for a rustic presentation.
  5. Enhance with Herbs: Add a sprinkle of fresh thyme leaves or a dash of smoked paprika over each serving to enhance the dish’s aroma and taste.

Storage Tips:

  1. Refrigeration: Allow any leftovers to cool completely before transferring them into airtight containers. Refrigerate within 2 hours of cooking.
  2. Reheating: To maintain the texture of the potatoes and beef, reheat portions gently in the microwave or oven until heated through.
  3. Freezing: Au gratin dishes with dairy components like cheese and soup may not freeze well due to texture changes. It’s best enjoyed fresh or refrigerated for up to 3 days.
  4. Meal Prep: Prepare the ingredients in advance and layer them in the slow cooker insert. Refrigerate overnight, then cook as directed when ready to serve.
  5. Flavor Development: Like many slow-cooked dishes, the flavors of beef and potatoes in au gratin develop further when allowed to rest overnight in the refrigerator.
