Ingredients

  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons butter
  • ½ large onion, chopped
  • 2 large carrots, sliced
  • 2 stalks celery, diced
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, minced
  • 4 cups chicken stock
  • 3 cups corn kernels
  • ½ cup heavy cream
  • 1 bay leaf (optional)

Instructions

Prepare Shrimp:

  • In a Dutch oven or large soup pot, heat olive oil over medium-high heat. Season shrimp with salt and pepper, then add them to the pot in a single layer. Cook for about 2 minutes per side until shrimp are just barely pink. Remove shrimp and set aside.

Cook Vegetables:

  • In the same pot, melt butter over medium heat. Add chopped onion, sliced carrots, and diced celery. Sauté for 6-7 minutes until vegetables are tender.

Add Flour and Aromatics:

  • Stir in flour, minced garlic, and minced rosemary, coating the vegetables evenly with the flour. Cook for about a minute to remove the raw flour taste.

Deglaze Pot:

  • Pour in 1 cup of chicken stock and use a wooden spoon to scrape up any browned bits from the bottom of the pot (this adds flavor to the chowder).

Simmer Chowder:

  • Add the remaining chicken stock, corn kernels, and bay leaf (if using). Bring the mixture to a boil over medium-high heat, then reduce heat to low.

Add Cream and Shrimp:

  • Stir in the heavy cream and return the shrimp to the pot. Cook for an additional 2-3 minutes until the shrimp are heated through.

Serve:

  • Remove the bay leaf. Ladle the Shrimp Corn Chowder into bowls and serve hot, garnished with additional fresh herbs if desired.
