Description

Pineapple Coconut Snowball Bites are sweet, creamy, and wonderfully refreshing no-bake treats with a delicious tropical flavor. Made with shredded coconut, crushed pineapple, and sweetened condensed milk, these little bites are easy to prepare and perfect for parties, holidays, dessert tables, or summer gatherings.

Ingredients

  • 1 cup shredded coconut
  • 1 cup crushed pineapple, well drained
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar, for coating

Instructions

  1. Add the shredded coconut, drained crushed pineapple, sweetened condensed milk, and vanilla extract to a medium mixing bowl.
  2. Stir everything together until the ingredients are evenly combined and form a thick mixture.
  3. Cover the bowl and refrigerate for approximately 30 minutes to allow the mixture to firm up.
  4. Line a baking sheet with parchment paper.
  5. Scoop out small portions of the chilled mixture and roll them between your palms to form bite-sized balls.
  6. Place the powdered sugar in a shallow bowl.
  7. Roll each coconut ball in powdered sugar until completely coated.
  8. Arrange the snowball bites on the prepared baking sheet.
  9. Refrigerate again until firm.
  10. Serve chilled and enjoy these delicious tropical treats!

Notes

  • Serve chilled: These snowball bites taste best straight from the refrigerator because their texture stays firm and creamy.
  • Party presentation: Arrange them in mini cupcake liners and place them on a dessert platter for an attractive presentation.
  • Extra coconut coating: Roll the bites in additional shredded coconut instead of powdered sugar for a classic snowball appearance.
  • Add fresh fruit: Serve alongside pineapple chunks, strawberries, or mango slices for a tropical dessert platter.
  • Refrigerator storage: Store the bites in an airtight container in the refrigerator for up to 4–5 days.
  • Freezer storage: Place the bites in a single layer until frozen, then transfer them to a freezer-safe container. Freeze for up to 2 months for best quality.
  • Thawing: Allow frozen bites to thaw in the refrigerator before serving.
  • Make-ahead tip: Prepare them a day before your gathering and keep refrigerated until ready to serve.
  • Prevent sticking: Use slightly damp hands or a small cookie scoop when shaping the mixture.
  • Drain the pineapple: Remove as much excess juice as possible to prevent the mixture from becoming too wet.
