Ingredients

  • 1 and a half pounds boneless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 can (20 oz.) sliced pineapple (juice reserved)
  • 1 tablespoon cornstarch
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 garlic cloves, minced
  • 4 servings of cooked rice

Instructions

  1. Begin by seasoning the chicken breasts with dried thyme, salt, and pepper, ensuring each piece is well coated.
  2. Heat vegetable oil in a skillet over medium heat, then brown the chicken until golden and cooked through. Set aside.
  3. Drain the sliced pineapple, reserving the juice for the sauce.
  4. In a small bowl, mix cornstarch with 2 oz. of the reserved pineapple juice and set aside.
  5. In another bowl, combine the remaining pineapple juice, Dijon mustard, honey, and minced garlic to create the flavorful sauce.
  6. Add the Dijon mixture to the skillet, reduce the heat to low, and cover. Allow it to simmer for 15 minutes to let the flavors meld.
  7. Once the sauce has simmered, remove the chicken from the skillet and set it aside.
  8. Stir the cornstarch mixture again, then add it to the skillet. Bring the sauce to a boil, stirring constantly until it thickens, approximately 2 minutes.
  9. Reduce the heat and return the chicken to the skillet, ensuring it’s coated in the luscious sauce.
  10. Arrange the pineapple slices around and on top of the chicken in the skillet. Cover and cook for an additional 2-3 minutes to heat the pineapple through.
  11. Serve the succulent chicken and pineapple over a bed of cooked rice, allowing the flavors to mingle for a perfect bite every time.
