Ingredients

  • 1 box gluten-free yellow cake mix
  • 1/2 cup (1 stick) unsalted butter
  • 2 teaspoons vanilla extract, divided
  • 3 (8-ounce) packages cream cheese, softened
  • 3 large eggs
  • 3 teaspoons cream of tartar
  • 3/4 cup sugar (or Splenda)
  • 1 bag frozen VIP peaches (or 3 fresh peaches, diced)
  • 1 teaspoon cinnamon
  • 1/3 cup brown sugar

Instructions

1. Prepare the Crust

Preheat your oven to 350 degrees F (175 degrees C). In a mixing bowl, combine the gluten-free yellow cake mix and chilled butter using a pastry blender until the mixture resembles coarse meal. Add 1 teaspoon of vanilla extract and mix well. Reserve about 1/2 cup of this mixture for later. Press the remaining mixture into the bottom of a 9-inch springform pan. Bake the crust in the preheated oven for about 10 minutes, or until it sets. Note that the crust may rise slightly while baking but will settle once removed from the oven.

2. Make the Cheesecake Filling

In a large bowl, beat together the softened cream cheese, 3 teaspoons of cream of tartar, and 3/4 cup sugar until smooth and creamy. Add the 3 eggs, one at a time, mixing well after each addition until fully combined. Pour this creamy cheesecake batter over the partially baked crust in the springform pan.

3. Prepare the Peach Topping

In a separate bowl, combine the diced peaches, brown sugar, and remaining 1 teaspoon of cinnamon. Evenly distribute this peach mixture over the cheesecake batter in the springform pan.

4. Add the Crumb Topping and Bake

Sprinkle the reserved crust and butter mixture evenly over the top of the peach layer. Bake in the preheated oven for 50 minutes. Once baking time is complete, turn off the oven and leave the cheesecake inside for an additional hour. This helps to prevent cracks in the cheesecake.

5. Chill and Serve
