The addition of marinara sauce and a cheesy topping takes this classic dish to a whole new level of indulgence.

Ingredients

  • 1 pound ground pork
  • 1 pound ground beef
  • 2 large eggs
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 to 2 garlic cloves, finely minced
  • 1 small yellow onion (grated)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pasta sauce (marinara sauce, homemade or store-bought, meatless)
  • 1/2 cup shredded cheese (Italian cheese blend)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a loaf pan with cooking spray and set aside.
  2. Mix the Meatloaf: In a large bowl, combine the ground pork, ground beef, eggs, breadcrumbs, dried basil, dried thyme, dried oregano, minced garlic, grated onion, salt, pepper, and Parmesan cheese. Mix gently until all ingredients are just combined to avoid over-handling the mixture, which can make the meatloaf tough.
  3. Form and Top: Transfer the meat mixture into the greased loaf pan and shape it into a loaf. Spread the pasta sauce evenly over the top.
  4. Bake: Place the loaf pan on a baking sheet to catch any drips and bake for 1 hour.
  5. Drain Grease and Add Cheese: After baking, remove the meatloaf from the oven and drain any excess grease. Sprinkle the shredded cheese over the top of the meatloaf.
  6. Final Bake: Return the meatloaf to the oven and bake until the cheese is melted and bubbly.
  7. Cool and Slice: Allow the meatloaf to sit for 5-10 minutes before slicing. This helps it hold its shape and makes for easier serving.

Notes

Serving Tips:

  1. Optimal Serving Temperature: Parmesan Meatloaf is delicious both warm and at room temperature. For the best taste, allow it to rest for 5-10 minutes after baking before slicing. This helps it hold its shape and makes serving easier.
  2. Pairings: Serve your meatloaf with classic sides like mashed potatoes, roasted vegetables, or a fresh green salad. It also goes well with steamed rice or buttered noodles for a hearty meal.
  3. Garnishing: Garnish with fresh herbs like parsley or basil for an extra touch of color and flavor. A sprinkle of extra Parmesan cheese on top can also enhance the cheesy goodness.
  4. Leftovers: Meatloaf can be enjoyed as leftovers in a variety of ways. Try it cold in sandwiches, or reheated with a side of vegetables for a quick meal.

Storage Tips:

  1. Refrigeration: Store leftover meatloaf in an airtight container in the refrigerator. It will keep well for up to 4 days. Make sure to let the meatloaf cool to room temperature before sealing it in the container.
  2. Freezing: To freeze meatloaf, wrap it tightly in plastic wrap and then in aluminum foil. It can be frozen for up to 3 months. For convenience, consider slicing the meatloaf before freezing so you can easily reheat individual portions.
  3. Reheating: Reheat leftover meatloaf in the oven at 350°F (175°C) for about 15-20 minutes or until warmed through. You can also use the microwave; just cover the meatloaf with a microwave-safe lid or wrap to prevent it from drying out. If reheating from frozen, thaw it in the refrigerator overnight before warming.
  4. Avoiding Dryness: To keep reheated meatloaf moist, add a splash of beef broth or water before covering and reheating. This will help retain the meatloaf’s juiciness and flavor.

By following these serving and storage tips, you’ll ensure that your Parmesan Meatloaf stays delicious and enjoyable for days to come!
