Parmesan Garlic Roasted Potatoes are a simple yet flavorful side dish with crispy golden edges, fluffy centers, and a rich blend of garlic, parmesan, and herbs. They pair perfectly with grilled meats, roasted chicken, seafood, or holiday dinners, making them a delicious addition to any meal.


Ingredients

  • 2 pounds red potatoes, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly coat a baking sheet with non-stick cooking spray.
  3. In a large bowl, combine olive oil, grated Parmesan, minced garlic, and oregano.
  4. Add the potato pieces and toss until evenly coated.
  5. Spread the potatoes in a single layer on the prepared baking sheet.
  6. Sprinkle with salt, pepper, and extra Parmesan if desired.
  7. Roast for 30–35 minutes until the potatoes are golden brown and crispy.
  8. Garnish with chopped parsley before serving.

Notes

  • Serve these potatoes hot alongside steak, grilled chicken, pork chops, fish, burgers, or roasted vegetables. They also make a delicious addition to breakfast with eggs and bacon.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat in the oven at 375°F for 10–15 minutes or in the air fryer for 5–7 minutes to restore crispiness.
  • Avoid microwaving if you want to keep the potatoes crispy.
  • Freeze cooked potatoes for up to 2 months. Reheat directly from frozen in the oven until heated through.
