Description
This Moist Coffee Loaf Cake is a simple, rich, and tender cake with delicious coffee flavor. It is easy to prepare and perfect for afternoon tea, a cozy coffee break, or a sweet after-dinner treat.
Ingredients
- 225 g (1¾ cups) plain/all-purpose flour, sifted
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 175 g (¾ cup) softened butter
- 200 g (1 cup) granulated sugar
- ⅔ cup (150 ml) milk
- 2 large eggs, lightly beaten
- 4 teaspoons coffee granules
- 1 tablespoon hot water
Instructions
- Preheat the oven to 170°C (325°F).
- Grease and line a loaf tin with parchment paper.
- Dissolve the coffee granules in 1 tablespoon of hot water and set aside.
- Sift the flour, baking powder, and salt together.
- Beat the softened butter and sugar until pale, light, and creamy.
- Slowly add the beaten eggs a little at a time while mixing on low speed.
- If the batter begins to curdle, add a spoonful of the sifted flour and continue mixing.
- Add the dissolved coffee, milk, and remaining flour to the batter.
- Mix gently until everything is just combined. Avoid overmixing.
- Transfer the batter to the prepared loaf tin and smooth the top.
- Bake for 1 hour to 1 hour 5 minutes, or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the tin briefly before transferring it to a wire rack.
- Cool completely before slicing and serving.

- Serve the loaf at room temperature with a cup of coffee or tea.
- Dust the cooled cake with powdered sugar for a simple finish.
- Add a light coffee glaze if you want extra sweetness and coffee flavor.
- Slice the loaf with a sharp serrated knife for neat pieces.
