Ingredients
- 8 ounces cream cheese (regular or light), softened
- 20 ounces pineapple chunks (drained, juice reserved)
- 4 ounces whipped topping or 1/2 cup heavy whipped cream
- 1 cup crushed vanilla wafers
- 2 tablespoons reserved pineapple juice (from canned pineapple)
Instructions
- Drain pineapple chunks and reserve the juice
- Chop pineapple chunks into smaller pieces and set aside
- Beat cream cheese in a mixing bowl until smooth and fluffy
- Add 2 tablespoons pineapple juice and mix well
- Fold in 1/2 cup pineapple chunks
- Gently fold in whipped topping or whipped cream
- In small jars or cups, start layering:
- 1 tablespoon crushed vanilla wafers
- 1–2 tablespoons cheesecake mixture
- 1–2 tablespoons pineapple chunks
- Repeat layers until cups are filled
- Top with crushed wafers and pineapple pieces
- Chill before serving for best flavor
