Mini Pineapple Cheesecake Trifles are a quick and refreshing dessert made with creamy cheesecake filling, sweet pineapple chunks, and crunchy vanilla wafers. Ingredients

  • 8 ounces cream cheese (regular or light), softened
  • 20 ounces pineapple chunks (drained, juice reserved)
  • 4 ounces whipped topping or 1/2 cup heavy whipped cream
  • 1 cup crushed vanilla wafers
  • 2 tablespoons reserved pineapple juice (from canned pineapple)

Instructions

  • Drain pineapple chunks and reserve the juice
  • Chop pineapple chunks into smaller pieces and set aside
  • Beat cream cheese in a mixing bowl until smooth and fluffy
  • Add 2 tablespoons pineapple juice and mix well
  • Fold in 1/2 cup pineapple chunks
  • Gently fold in whipped topping or whipped cream
  • In small jars or cups, start layering:
    • 1 tablespoon crushed vanilla wafers
    • 1–2 tablespoons cheesecake mixture
    • 1–2 tablespoons pineapple chunks
  • Repeat layers until cups are filled
  • Top with crushed wafers and pineapple pieces
  • Chill before serving for best flavor

Notes

  • Serve chilled for best texture and flavor
  • Best served within 24–48 hours for freshness
  • Store covered in the refrigerator
  • Do not freeze, as texture may separate
  • Use clear cups or jars for a beautiful layered presentation
