Ingredients
For the Oreo Crust
- 1½ cups Oreo crumbs (about 16 whole Oreos)
- 4 tablespoons unsalted butter, melted
For the Cheesecake Filling
- 16 ounces full-fat cream cheese, room temperature
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, room temperature
- ¼ cup Oreo crumbs
- 4–5 whole Oreos, roughly chopped (cream included)
Instructions
Prepare the Crust
- Preheat oven to 350°F (175°C).
- Line a 12-cup muffin pan with paper liners.
- Mix Oreo crumbs and melted butter until combined.
- Add 1–2 tablespoons of crust mixture into each liner.
- Press firmly using the bottom of a cup or spoon.
- Bake for 5 minutes, then set aside to cool.
Make the Cheesecake Filling
- Beat cream cheese until smooth (2–3 minutes).
- Mix in sugar and vanilla until fully incorporated.
- Add eggs one at a time, mixing just until combined.
- Gently fold in Oreo crumbs and chopped Oreos.
Bake
- Spoon a little over 2 tablespoons of batter into each liner.
- Sprinkle extra Oreo crumbs or chunks on top if desired.
- Bake for 15–17 minutes, until centers are slightly jiggly.
- Cool completely, then refrigerate for at least 2 hours before serving.
