Description

Marinated Cucumber & Tomato Salad is a light, refreshing, and flavorful side dish made with crisp cucumbers, juicy tomatoes, and red onions tossed in a tangy homemade vinaigrette. It’s perfect for summer gatherings, barbecues, picnics, or as a healthy addition to any meal. The longer it marinates, the more delicious the flavors become.


Ingredients

  • ⅓ cup cider vinegar
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinaigrette
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 medium tomatoes, cored and cut into 8 wedges
  • 2 medium cucumbers, sliced
  • 1 cup thinly sliced red onion rings

Instructions

  1. In a large bowl, whisk together the cider vinegar, olive oil, balsamic vinaigrette, salt, and black pepper.
  2. Add the tomatoes, cucumbers, and red onion.
  3. Gently toss until all vegetables are evenly coated with the dressing.
  4. Cover the bowl and refrigerate for at least 2 hours.
  5. Stir once or twice while marinating for the best flavor.
  6. Serve chilled and enjoy.
