Description

Loaded Mashed Potato Egg Rolls are the perfect combination of crispy, golden wrappers and creamy mashed potatoes filled with melty cheddar cheese. They make an irresistible appetizer, snack, or party favorite that is easy to prepare and ready in just minutes.

 


Ingredients

  • 2 cups prepared mashed potatoes
  • 2 green onions, thinly sliced
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Black pepper, to taste
  • 8 ounces cheddar cheese, cut into 3-inch sticks
  • 8 to 10 egg roll wrappers
  • Oil for frying
  • Sour cream, for serving (optional)

Instructions

  1. Combine the cooled mashed potatoes, green onions, egg, garlic powder, onion powder, and black pepper in a large bowl until well mixed.
  2. Wrap about 3 tablespoons of the mashed potato mixture around each cheddar cheese stick, making sure the cheese is fully covered.
  3. Place an egg roll wrapper on a flat surface with one corner facing you.
  4. Put the potato and cheese filling in the center.
  5. Fold in the sides and roll tightly.
  6. Seal the edge with a little water.
  7. Heat oil to 350°F (175°C).
  8. Fry the egg rolls for 4 to 5 minutes until golden brown and crispy.
  9. Drain on paper towels.
  10. Serve immediately with sour cream or your favorite dipping sauce.
