Ingredients
- 2 tablespoons olive oil
- 2 cups sliced carrots, about 2–3 large carrots
- 1 ½ cups diced celery, about 3–4 ribs
- 1 ½ cups diced onion, about 1 medium onion
- 3 teaspoons minced garlic, about 3 cloves
- 2 tablespoons fresh thyme, stems removed
- 10 cups chicken broth
- 12 ounces wide egg noodles
- 2 cups shredded chicken
- 2 tablespoons fresh parsley
- Salt, to taste
- Ground black pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the sliced carrots, diced celery, and diced onion.
- Cook the vegetables for 4–5 minutes, stirring occasionally, until they begin to soften.
- Add the minced garlic and fresh thyme.
- Cook for another minute, stirring frequently, until the garlic becomes fragrant.
- Pour the chicken broth into the pot and stir to combine.
- Add the wide egg noodles and bring the soup to a boil over high heat.
- Reduce the heat and let the soup simmer for about 10 minutes, or until the noodles are al dente.
- Add the shredded chicken and fresh parsley just before serving.
- Continue simmering until the chicken is heated completely through.
- Season with salt and freshly ground black pepper to taste.
- Serve the chicken noodle soup warm.
Notes
- Serve the soup hot with extra fresh parsley sprinkled over each bowl.
- Pair it with crusty bread, dinner rolls, garlic bread, or crackers for a complete meal.
- A fresh green salad makes a light side dish that balances the hearty soup.
- For extra flavor, add a squeeze of fresh lemon juice just before serving.
- Store leftover soup in an airtight container in the refrigerator for up to 3–4 days.
- The noodles will continue absorbing broth as the soup sits, so you may need to add a little extra chicken broth when reheating.
- Reheat individual portions in the microwave or warm the soup gently in a saucepan on the stovetop.
- If you plan to freeze the soup, consider cooking and storing the noodles separately because they can become soft after freezing and thawing.
- Freeze the soup without noodles in freezer-safe containers for up to 2–3 months. Thaw overnight in the refrigerator and reheat before adding freshly cooked noodles.
