Ingredients

For the Pie Crust

  • 1 1/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 2 to 4 tablespoons ice water

For the Filling

  • 3 to 4 medium peaches
  • 1 1/4 cups fresh blueberries
  • 3 eggs
  • 3/4 cup plus 2 tablespoons whole milk
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 tablespoons unsalted butter, melted and slightly cooled
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons sanding sugar

For Serving

  • Whipped cream
  • Vanilla ice cream

Instructions

Step 1: Prepare the Pie Crust

  1. In a food processor, combine flour, sugar, and salt.
  2. Add cold cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Add 2 tablespoons ice water and pulse.
  4. Add additional water, one tablespoon at a time, if needed.
  5. The dough should hold together when squeezed.
  6. Shape dough into a disc.
  7. Wrap and refrigerate for at least 1 hour.

Step 2: Form the Crust

  1. Lightly flour your work surface.
  2. Roll dough into a 12 to 13-inch circle.
  3. Transfer to a 10-inch pie dish.
  4. Fold and crimp the edges.
  5. Refrigerate while preparing the filling.

Step 3: Make the Filling

  1. In a large bowl, whisk together eggs, milk, flour, sugar, melted butter, and vanilla extract.
  2. Mix until smooth and well combined.
  3. The batter will be thin.

Step 4: Prepare the Fruit

  1. Peel peaches if desired.
  2. Slice peaches in half and remove pits.
  3. Cut each half into thin slices.

Step 5: Assemble the Pie

  1. Arrange peach slices in the pie crust, maintaining the shape of the peach halves.
  2. Place one peach half in the center.
  3. Arrange remaining peach slices around the center.
  4. Pour half the custard mixture over the peaches.
  5. Scatter half the blueberries throughout the pie.
  6. Pour the remaining custard over the fruit.
  7. Top with the remaining blueberries.
  8. Sprinkle sanding sugar evenly over the top.

Step 6: Bake

  1. Preheat oven to 350°F (175°C).
  2. Bake for 35 to 40 minutes.
  3. The center should be set but slightly jiggly.
  4. Remove from oven and cool completely before serving.
