Description

Bibimbap is a colorful and satisfying Korean rice dish made with seasoned vegetables, savory ground beef, fried eggs, and a sweet-spicy gochujang sauce. It is an easy way to enjoy a balanced, flavorful meal with plenty of texture in every bite.

Ingredients

For the Bibimbap Sauce

  • ¼ cup gochujang Korean red chili paste
  • 1 tablespoon sesame oil
  • 2 tablespoons sugar
  • 1 clove garlic, minced
  • ½ teaspoon rice vinegar
  • 2 tablespoons water
  • 1 teaspoon sesame seeds

For the Meat

  • 200 g ground beef
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar or honey

For the Vegetables and Rice

  • 1 carrot, julienned
  • 200 g spinach
  • 100 g shiitake mushrooms, sliced
  • 100 g bean sprouts
  • 2 teaspoons salt, divided as needed
  • 3 cups cooked rice
  • 2 eggs
  • 1 teaspoon sesame oil, divided between spinach and bean sprouts
  • 1 teaspoon sesame seeds
  • ½ cup water

Instructions

  1. Mix the ground beef with sesame oil, minced garlic, soy sauce, and brown sugar or honey. Let it marinate for 30 minutes.
  2. While the beef marinates, combine the gochujang, sesame oil, sugar, garlic, rice vinegar, water, and sesame seeds in a bowl. Mix well and set aside.
  3. Heat a little oil in a pan over medium heat. Add the julienned carrot and a pinch of salt. Cook until tender and vibrant, then remove from the pan.
  4. Add the sliced shiitake mushrooms to the same pan with a pinch of salt. Cook until tender and fully cooked, then remove and set aside.
  5. Add ¼ cup water to the pan and blanch the spinach until the leaves become bright green.
  6. Immediately drain the spinach, transfer it to a bowl, and season with salt and ½ teaspoon sesame oil.
  7. Add another ¼ cup water to the pan. Add the bean sprouts and cook for about 3 minutes, until translucent.
  8. Drain and rinse the bean sprouts with cool water. Squeeze out excess water, transfer them to a bowl, and season with the remaining salt and ½ teaspoon sesame oil.
  9. Heat a little oil in the pan over medium heat and fry the eggs until the whites are set.
  10. Cook the marinated ground beef in the same pan until thoroughly cooked.
  11. Divide the cooked rice between two bowls.
  12. Arrange the beef, carrot, spinach, mushrooms, and bean sprouts over the rice.
  13. Place a fried egg on each bowl.
  14. Drizzle with the prepared bibimbap sauce and sprinkle with sesame seeds.
  15. Serve immediately and mix everything together before eating.

Notes

  • Serve bibimbap hot with the fried egg on top and extra gochujang sauce on the side.
  • Add the sauce gradually so you can adjust the spice and sweetness to your preference.
  • For a crispy texture, serve the rice in a hot stone bowl or skillet and let the bottom brown slightly.
  • Add kimchi, sliced cucumber, or extra sesame seeds for more flavor and texture.
  • Store leftover cooked beef and vegetables in separate airtight containers in the refrigerator for up to 3 days.
  • Store the cooked rice separately when possible to prevent it from becoming soggy.
  • Reheat the rice, beef, and vegetables thoroughly before serving.
  • For best results, prepare a fresh fried egg when reheating leftovers.
