Ingredients

  • 2 cups cooked chicken breast, diced
  • 3 cups corn (fresh, frozen, or canned)
  • 1/2 cup red onion, finely diced
  • 1/2 cup crumbled cotija cheese
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, cumin, garlic powder, salt, and pepper until smooth.
  2. Add the diced chicken, corn, red onion, cotija cheese, cilantro, and jalapeño to a large mixing bowl.
  3. Pour the dressing over the salad ingredients.
  4. Toss gently until everything is evenly coated.
  5. Taste and adjust seasoning with more salt, pepper, or lime juice if desired.
  6. Cover and refrigerate for at least 30 minutes.
  7. Stir before serving and garnish with extra cotija cheese and cilantro if preferred.
