This vibrant red drink has a delicious balance of fruity, tangy, and gently spicy flavors. Serve it chilled over ice for a refreshing treat on hot days, family gatherings, and parties.
Ingredients
- 4 cups dried zobo leaves (hibiscus petals)
- 1 medium pineapple, peeled and chopped
- 1 large piece of fresh ginger
- 1 teaspoon whole cloves
- ¼ cup sugar, or to taste
- 3–4 liters water
- Pineapple juice, to taste, for sweetening and extra flavor
Instructions
- Rinse the dried hibiscus leaves thoroughly under clean running water to remove any dirt or debris.
- Wash, peel, and chop the pineapple. Keep the peel for boiling and reserve the pineapple flesh for juice or another use.
- Wash and slice the fresh ginger into smaller pieces.
- Place the hibiscus leaves, ginger, whole cloves, and pineapple peel in a large pot.
- Add 3–4 liters of water and bring the mixture to a boil.
- Reduce the heat and simmer for 25–30 minutes until the liquid becomes deep red and the flavors are well infused.
- Remove the pot from the heat and allow the mixture to cool slightly.
- Strain the liquid through a fine-mesh sieve to remove the hibiscus leaves, ginger, cloves, and pineapple peel.
- While the drink is still slightly warm, stir in pineapple juice and sugar to taste.
- Allow the drink to cool completely, then pour it into clean, food-safe bottles.
- Seal the bottles and refrigerate until thoroughly chilled.
- Serve over ice and enjoy your homemade hibiscus drink.
