Harvest Caramel Corn is a quick and irresistible snack that combines crunchy popcorn with rich homemade caramel and festive candies. Ingredients

  • 10 cups popped popcorn
  • Salt to taste
  • 1 cup salted butter
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • Mini Rolos or regular Rolos
  • M&M candies (brown, yellow, red, orange)
  • Pretzel M&M’s

Instructions

  1. Pop 10 cups of popcorn and remove all unpopped kernels
  2. Place popcorn in a large bowl and salt to taste
  3. Melt butter in a saucepan over medium-low heat
  4. Add brown sugar and stir until combined
  5. Bring mixture to a low boil while stirring
  6. Let boil for 4 minutes without stirring
  7. Add vanilla and stir for 1 minute
  8. Remove from heat and add baking soda, stirring until foamy
  9. Pour caramel gradually over popcorn, mixing gently
  10. Continue until popcorn is fully coated
  11. Spread popcorn onto a lined baking sheet
  12. Allow to cool slightly
  13. Sprinkle candies over the top
  14. Let cool completely before serving

 

Notes

Serve in large bowls for sharing at parties or package into small bags for gifts
Add candies after the popcorn cools slightly so they don’t melt too much
Store in an airtight container at room temperature for up to 3 days
Keep in a cool, dry place to maintain crunch
Avoid refrigeration as it can make the caramel sticky
If popcorn softens, re-crisp it in the oven at low heat for a few minutes
