Greek Shrimp Mediterranean Bowl is a fresh, colorful, and nutritious meal packed with Mediterranean flavors. Juicy seasoned shrimp, fluffy quinoa, crisp vegetables, tangy feta cheese, and briny olives come together to create a satisfying dish that’s perfect for lunch or dinner. It’s easy to prepare, naturally gluten-free, and ideal for meal prep.

 


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup uncooked quinoa
  • 2 cups water
  • 4 cups chopped romaine lettuce
  • 1 cucumber, sliced
  • 1 cup diced tomatoes
  • ½ red onion, thinly sliced
  • ½ cup sliced Kalamata olives
  • ¾ cup crumbled feta cheese
  • 1 lemon, cut into wedges
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic, paprika, oregano, salt, and black pepper. Cook for 1–2 minutes until fragrant.
  3. Add the shrimp and cook for 3–4 minutes per side until pink and fully cooked.
  4. Remove the shrimp from the skillet and set aside.
  5. Rinse the quinoa under cold water.
  6. Cook quinoa with 2 cups of water according to package directions until tender, about 10–15 minutes.
  7. Fluff the cooked quinoa with a fork and allow it to cool slightly.
  8. In a large serving bowl, combine romaine lettuce, cucumber, tomatoes, red onion, olives, and cooked quinoa.
  9. Top with the cooked shrimp.
  10. Sprinkle feta cheese and fresh parsley over the bowl.
  11. Serve with fresh lemon wedges for squeezing over each serving.

Notes

  • Serve immediately for the freshest texture.
  • Drizzle with extra virgin olive oil before serving for added richness.
  • Add a side of warm pita bread for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Keep the shrimp separate from the vegetables if preparing ahead.
  • Store lemon wedges separately until serving.
  • Do not freeze assembled bowls, as the vegetables lose their crispness.
  • Reheat only the shrimp and quinoa before assembling if desired.
