Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup uncooked quinoa
- 2 cups water
- 4 cups chopped romaine lettuce
- 1 cucumber, sliced
- 1 cup diced tomatoes
- ½ red onion, thinly sliced
- ½ cup sliced Kalamata olives
- ¾ cup crumbled feta cheese
- 1 lemon, cut into wedges
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic, paprika, oregano, salt, and black pepper. Cook for 1–2 minutes until fragrant.
- Add the shrimp and cook for 3–4 minutes per side until pink and fully cooked.
- Remove the shrimp from the skillet and set aside.
- Rinse the quinoa under cold water.
- Cook quinoa with 2 cups of water according to package directions until tender, about 10–15 minutes.
- Fluff the cooked quinoa with a fork and allow it to cool slightly.
- In a large serving bowl, combine romaine lettuce, cucumber, tomatoes, red onion, olives, and cooked quinoa.
- Top with the cooked shrimp.
- Sprinkle feta cheese and fresh parsley over the bowl.
- Serve with fresh lemon wedges for squeezing over each serving.
