These Best Fudgy Vegan Brownies are rich, chocolatey, and irresistibly soft in the center with a beautiful shiny, crackly crust. Made without eggs or dairy, they’re easy to prepare with simple ingredients and are perfect for satisfying any chocolate craving.


Ingredients

Wet Ingredients

  • 1 ½ cups very finely ground granulated sugar
  • ½ cup water
  • 2 tablespoons ground flaxseed
  • 5 tablespoons water for the flaxseed
  • ½ cup oil
  • 1 tablespoon vanilla extract
  • Or use 5 tablespoons applesauce instead of the flaxseed mixture

Dry Ingredients

  • ¾ cup cocoa powder, sifted if needed
  • 1 ½ cups all-purpose flour or gluten-free flour
  • ½ teaspoon salt
  • ½ cup chocolate chips
  • Extra chocolate chips for topping, optional

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk the ground flaxseed with 5 tablespoons of water in a small bowl. Let it sit until thickened. Skip this step if using applesauce.
  3. Add the sugar and ½ cup water to a medium saucepan.
  4. Heat over medium-low heat, stirring occasionally, until the sugar completely dissolves. This usually takes about 5–10 minutes.
  5. In a large bowl, whisk together the cocoa powder, flour, and salt.
  6. Pour the dissolved sugar mixture into the dry ingredients.
  7. Add the oil, vanilla, and thickened flax mixture or applesauce.
  8. Stir gently with a wooden spoon or rubber spatula just until the batter comes together. Avoid overmixing.
  9. Fold in the chocolate chips.
  10. Pour the batter into a parchment-lined 8×8-inch baking pan.
  11. Sprinkle extra chocolate chips over the top if desired.
  12. Bake for 35–42 minutes. Around 38 minutes should give you a fudgy center.
  13. Remove from the oven and allow the brownies to cool completely.
  14. Lift the brownies from the pan using the parchment paper and cut into 16 squares.
  15. Enjoy once completely cooled for the cleanest slices and fudgiest texture.

  • Add a scoop of dairy-free vanilla ice cream for an extra indulgent dessert.
  • Dust the cooled brownies with a little powdered sugar before serving.
