- 1 ½ cups very finely ground granulated sugar
- ½ cup water
- 2 tablespoons ground flaxseed
- 5 tablespoons water for the flaxseed
- ½ cup oil
- 1 tablespoon vanilla extract
- Or use 5 tablespoons applesauce instead of the flaxseed mixture
Dry Ingredients
- ¾ cup cocoa powder, sifted if needed
- 1 ½ cups all-purpose flour or gluten-free flour
- ½ teaspoon salt
- ½ cup chocolate chips
- Extra chocolate chips for topping, optional
Instructions
- Preheat the oven to 350°F.
- Whisk the ground flaxseed with 5 tablespoons of water in a small bowl. Let it sit until thickened. Skip this step if using applesauce.
- Add the sugar and ½ cup water to a medium saucepan.
- Heat over medium-low heat, stirring occasionally, until the sugar completely dissolves. This usually takes about 5–10 minutes.
- In a large bowl, whisk together the cocoa powder, flour, and salt.
- Pour the dissolved sugar mixture into the dry ingredients.
- Add the oil, vanilla, and thickened flax mixture or applesauce.
- Stir gently with a wooden spoon or rubber spatula just until the batter comes together. Avoid overmixing.
- Fold in the chocolate chips.
- Pour the batter into a parchment-lined 8×8-inch baking pan.
- Sprinkle extra chocolate chips over the top if desired.
- Bake for 35–42 minutes. Around 38 minutes should give you a fudgy center.
- Remove from the oven and allow the brownies to cool completely.
- Lift the brownies from the pan using the parchment paper and cut into 16 squares.
- Enjoy once completely cooled for the cleanest slices and fudgiest texture.
