Ingredients

For the Strawberry Cake

  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream
  • ½ cup light olive oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 12 ounces fresh strawberries, hulled
  • 1 teaspoon powdered sugar (optional, for dusting)

For the Strawberry Sauce

  • 16 ounces fresh strawberries, hulled and halved
  • ¼ cup granulated sugar (adjust to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butter a 9-inch springform pan and line the bottom with parchment paper.
  3. Dice half of the strawberries and cut the remaining half into halves.
  4. Beat the eggs and sugar together for about 5 minutes until pale and fluffy.
  5. Mix in the sour cream, oil, and vanilla extract until combined.
  6. In another bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  8. Pour half of the batter into the prepared pan.
  9. Scatter the diced strawberries evenly over the batter.
  10. Spread the remaining batter on top.
  11. Arrange the halved strawberries cut-side down over the surface and press them in lightly.
  12. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  13. Cool in the pan for 15–20 minutes before removing the springform ring.
  14. Transfer to a serving plate and cool completely.
  15. Dust with powdered sugar if desired.
  16. Blend the strawberries and sugar until smooth to make the strawberry sauce.
  17. Serve each slice generously drizzled with the fresh strawberry sauce.
