Ingredients
- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup carrots, sliced
- 1 cup mushrooms, sliced
- 2 cups egg noodles
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef and brown it on all sides for about 5–7 minutes.
- Transfer the browned beef to the crockpot.
- Add the chopped onion and minced garlic to the same skillet and sauté for 2–3 minutes until softened.
- Transfer the onion and garlic to the crockpot.
- Pour in the beef broth and Worcestershire sauce.
- Add the dried thyme, salt, and black pepper, then stir to combine.
- Add the sliced carrots and mushrooms and gently mix everything together.
- Cover the crockpot and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender.
- About 30 minutes before serving, stir in the egg noodles.
- Cover and continue cooking until the noodles are tender.
- Serve warm and garnish with fresh chopped parsley.
