Ingredients

  • 1 cup (227 g) unsalted butter
  • 1/2 cup (100 g) packed light brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 2 teaspoons molasses
  • 2 ounces (60 ml) espresso or strong brewed coffee
  • 1 generous pinch flaky sea salt or kosher salt, plus extra for topping if desired
  • 1 cup (170 g) dark chocolate chips or chopped dark chocolate

Instructions

  1. Prepare the baking sheet: Line a small rimmed baking sheet with parchment paper. A smaller pan works best because the mixture will not cover a full 9 × 13-inch pan. Have the chocolate and optional toppings ready.
  2. Combine the ingredients: In a medium, heavy-bottomed saucepan, combine the butter, brown sugar, granulated sugar, molasses, coffee, and salt.
  3. Cook the mixture: Heat over medium-high heat, whisking occasionally, until the mixture reaches 250°F on a candy thermometer.
  4. Reach the hard-crack stage: Continue cooking, stirring constantly, until the temperature reaches 300°F. The mixture should turn a deep caramel color.
  5. Pour the toffee: Carefully pour the hot mixture onto the prepared baking sheet and quickly spread it into an even layer using a heat-resistant spatula.
  6. Add the chocolate: Let the toffee sit for about 1 minute, then sprinkle the dark chocolate evenly over the surface. Wait 1–2 minutes for the chocolate to soften.
  7. Spread the chocolate: Use a spatula to spread the softened chocolate into an even layer.
  8. Add sea salt: Sprinkle flaky sea salt over the melted chocolate, if desired.
  9. Cool completely: Let the toffee cool at room temperature until firm, about 30 minutes. Refrigerate it if you want to speed up the process.
  10. Break and store: Once completely set, break the toffee into pieces and transfer them to an airtight container.
