Classic Struffoli (Italian Honey Balls)

  • Author: Lusine Svetlana

Description

Classic Struffoli are traditional Italian Christmas treats made with tiny, golden fried dough balls coated in warm honey and decorated with colorful rainbow sprinkles. Crispy on the outside, soft on the inside, and wonderfully sweet, these bite-sized treats are perfect for holiday celebrations, family gatherings, and festive dessert tables.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 3 large eggs
  • ¼ cup unsalted butter, melted
  • ½ cup honey
  • Zest of 1 lemon
  • Zest of 1 orange
  • Vegetable oil, for frying
  • Rainbow sprinkles, for decoration
  • A pinch of salt

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the flour, sugar, and salt. Add the eggs, melted butter, lemon zest, and orange zest. Mix until a soft dough forms.
  2. Knead the Dough: Transfer the dough to a lightly floured surface and knead gently until smooth and elastic. Avoid adding too much extra flour.
  3. Shape the Dough: Divide the dough into smaller portions. Roll each portion into a thin rope.
  4. Cut into Pieces: Cut the ropes into small, pea-sized pieces to create the traditional Struffoli shape.
  5. Heat the Oil: Pour vegetable oil into a large, deep pot and heat to 350°F (175°C).
  6. Fry the Dough Balls: Fry the dough pieces in small batches for about 2–3 minutes, turning occasionally, until golden brown.
  7. Drain: Remove the fried dough balls with a slotted spoon and place them on paper towels to absorb excess oil.
  8. Warm the Honey: In a large saucepan, gently warm the honey over low heat until it becomes thin and easy to pour. Do not boil.
  9. Coat the Struffoli: Add the fried dough balls to the warm honey and gently stir until every piece is evenly coated.
  10. Arrange and Decorate: Transfer the honey-coated balls to a serving platter. Arrange them into a mound or wreath shape and decorate with rainbow sprinkles.
  11. Serve: Allow the honey coating to set slightly before serving. Enjoy your homemade Italian Honey Balls!

Notes

  • Serving: Arrange Struffoli in a traditional mound or wreath shape on a large serving platter.
  • Holiday presentation: Decorate with rainbow sprinkles, candied orange peel, or small colorful candies for a festive Christmas dessert.
  • Serve at room temperature: Struffoli are delicious at room temperature once the honey coating has slightly set.
  • Storage: Keep leftovers in an airtight container at room temperature for approximately 3–4 days.
  • Refrigeration: Refrigeration is generally unnecessary and may make the honey coating harder.
  • Freezing: Freeze the fried, uncoated dough balls in an airtight freezer-safe container for up to 2 months. Thaw and gently warm before coating with honey.
  • Make-ahead tip: Fry the dough balls a day ahead and store them in an airtight container. Warm the honey and coat them shortly before serving.
  • Avoid sogginess: Make sure the fried dough balls are completely drained and avoid overheating the honey.
  • Keep them fresh: Store in a cool, dry place away from direct sunlight and moisture.
