Ingredients
For the Cake:
- 4 oz (115g) dark chocolate (60–70% cocoa), chopped
- ½ cup (115g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 6 large eggs, separated
- ¼ cup (50g) granulated sugar, for egg whites
- 1 cup (120g) all-purpose flour
- 1 teaspoon vanilla extract
- Pinch of salt
For the Filling:
- – ½ cup (120g) apricot jam, warmed and strained if needed
For the Chocolate Glaze:
- 4 oz (115g) dark chocolate
- ½ cup (120ml) heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Melt the dark chocolate in a heatproof bowl over simmering water. Stir until smooth, then let it cool slightly.
- In a large mixing bowl, beat the softened butter and ½ cup granulated sugar until light and fluffy.
- Add the egg yolks one at a time, beating well after each addition.
- Mix in the melted chocolate and vanilla extract until combined.
- In a separate clean bowl, whisk the egg whites with a pinch of salt until foamy.
- Gradually add the remaining ¼ cup sugar and continue beating until stiff peaks form.
- Gently fold the whipped egg whites into the chocolate mixture in two or three additions.
- Sift in the flour and carefully fold until just combined. Avoid overmixing to keep the cake light.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, carefully slice the cake horizontally into two even layers.
- Warm the apricot jam until spreadable. Spread half over the bottom cake layer.
- Place the top layer back on and spread the remaining jam over the top and sides of the cake.
- To prepare the glaze, heat the heavy cream in a saucepan until it just begins to simmer.
- Remove from the heat, add the chopped dark chocolate, and stir until completely smooth and glossy.
- Place the cake on a wire rack over a baking tray. Pour the chocolate glaze evenly over the cake, covering the top and sides.
- Allow the glaze to set at room temperature or refrigerate briefly until firm.
- Slice and serve with freshly whipped cream.
Notes
- Traditional serving: Serve each slice with a generous spoonful of unsweetened whipped cream. The cream balances the richness of the chocolate.
- Coffee pairing: Enjoy Sachertorte with espresso, cappuccino, or a cup of black coffee.
- Beautiful presentation: Use a sharp, warm knife to cut clean slices without cracking the chocolate glaze.
- Room temperature: Let refrigerated slices sit at room temperature for 20–30 minutes before serving for the best texture.
- Refrigerator storage: Store the cake in an airtight container in the refrigerator for up to 4–5 days.
- Freezing: Freeze individual slices or the whole unglazed cake, tightly wrapped, for up to 2 months for best quality.
- Thawing: Thaw frozen cake overnight in the refrigerator, then bring it to room temperature before serving.
- Make ahead: Bake the cake a day ahead and assemble it with the apricot jam and chocolate glaze. The flavors develop beautifully as it rests.
- Avoid excess moisture: Keep the cake covered when refrigerated to prevent it from absorbing other food odors or drying out.
