Ingredients

For the Fruit Mixture

  • 2 apples, chopped
  • 2 persimmons, chopped
  • 1 tablespoon lemon juice

For the Cinnamon Swirl

  • 3 tablespoons melted butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon powder

For the Cake Batter

  • 3 eggs
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup oil
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

For the Glaze

  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. Line an 11Γ—11-inch or 13Γ—9-inch baking pan with parchment paper.
  3. Add chopped apples, chopped persimmons, and lemon juice to a bowl. Toss until evenly coated.
  4. In another bowl, combine melted butter, brown sugar, and cinnamon powder. Mix well and set aside.
  5. In a large mixing bowl, whisk eggs, sugar, vanilla extract, and oil for about 3 minutes until light and airy.
  6. Add flour, salt, and baking powder to the wet mixture.
  7. Gently whisk until just combined. Do not overmix.
  8. Fold the fruit mixture into the batter.
  9. Pour the batter into the prepared baking pan and spread evenly.
  10. Spoon the cinnamon swirl mixture over the batter.
  11. Use a spoon or knife to gently swirl the cinnamon mixture through the cake.
  12. Bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  13. Allow the cake to cool for 10 minutes.
  14. In a small bowl, whisk powdered sugar and milk until smooth.
  15. Drizzle the glaze over the warm cake.
  16. Slice and serve warm or at room temperature.
