Description

Cinnamon Roll Casserole is an easy and comforting breakfast that combines soft cinnamon rolls, sweet apple pie filling, buttery brown sugar, warm cinnamon, and crunchy pecans. Baked until golden and finished with a drizzle of creamy icing, this delicious casserole is perfect for weekend breakfasts, brunches, holidays, and family gatherings.


Ingredients

  • 2 cans refrigerated cinnamon rolls with icing, 8 count each
  • 2 cups apple pie filling, diced into smaller chunks
  • ½ tablespoon lemon juice
  • 5 tablespoons butter, melted
  • ⅓ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 cup pecans

Instructions

  1. Preheat the oven to 375°F.
  2. Spray a 3-quart casserole dish with nonstick cooking spray.
  3. Cut each cinnamon roll into 4 pieces and arrange the pieces in the prepared casserole dish.
  4. Melt the butter and pour it evenly over the cinnamon roll pieces.
  5. In a small bowl, combine the brown sugar and cinnamon.
  6. Sprinkle the brown sugar mixture over the buttered cinnamon roll pieces.
  7. Dice the apples in the pie filling into smaller pieces.
  8. Place the apples and filling in a bowl and mix with the lemon juice.
  9. Spoon the apple pie filling evenly over the cinnamon roll crumble.
  10. Sprinkle the pecan halves over the top.
  11. Gently stir the ingredients slightly into the casserole so everything is incorporated.
  12. Cover and bake for 40 minutes.
  13. Remove the cover and bake for another 3–5 minutes, or until the top is golden brown. Watch carefully because pecans can burn quickly.
  14. Place the icing from the cinnamon roll cans in a microwave-safe bowl.
  15. Microwave the icing for about 10 seconds, just until slightly melted.
  16. Drizzle the warm icing over the casserole.
  17. Serve warm.

  • Serve with fresh berries, sliced bananas, or a spoonful of whipped cream.
