Description

Cinnamon Roll Banana Bread combines moist, fluffy banana bread with a sweet cinnamon-sugar swirl. It is easy to make, comforting, and perfect for breakfast, brunch, or an afternoon treat.


Ingredients

Banana Bread

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 34 medium bananas, or 2 large bananas
  • 1 teaspoon vanilla extract

Cinnamon Roll Filling

  • 1 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan with parchment paper.
  2. Whisk the granulated sugar, brown sugar, and cinnamon together in a small bowl. Set aside.
  3. Mash the bananas with a fork, leaving a few small pieces for texture.
  4. Cream the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs and mix until well combined.
  6. Add the flour, baking soda, and salt. Mix until just combined.
  7. Add the mashed bananas and vanilla extract, mixing until incorporated.
  8. Spread 1/3 of the batter into the prepared loaf pan.
  9. Sprinkle half of the cinnamon-sugar mixture over the batter.
  10. Add another 1/3 of the banana batter and gently spread it evenly.
  11. Sprinkle the remaining cinnamon-sugar mixture over the batter.
  12. Add the remaining banana batter and smooth the top.
  13. Use a knife to gently swirl the batter 4–5 times.
  14. Bake at 350°F for 35 minutes.
  15. Reduce the oven temperature to 325°F and bake for another 20–25 minutes, or until a cake tester comes out clean.
  16. Cool in the pan for 10–15 minutes, then transfer to a wire rack.
  17. Serve warm, at room temperature, or chilled.

Notes

  • Serve warm with a little butter for extra richness.
  • Pair a slice with coffee, tea, or milk for breakfast.
  • Add a drizzle of simple vanilla glaze before serving.
  • Store completely cooled bread in an airtight container at room temperature for up to 3 days.
  • Refrigerate it in an airtight container for up to 5 days.
  • Freeze individual slices for up to 3 months.
  • Thaw frozen slices in the refrigerator or at room temperature.
  • Warm refrigerated or thawed slices briefly in the microwave before serving.
