Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups cooked beets, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Drain and rinse the chickpeas thoroughly.
  2. Chop the cooked beets into bite-sized pieces.
  3. Thinly slice the red onion.
  4. Chop the fresh parsley.
  5. Add the chickpeas, beets, feta cheese, red onion, and parsley to a large mixing bowl.
  6. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
  7. Pour the vinaigrette over the salad.
  8. Toss gently until everything is evenly coated.
  9. Refrigerate for about 30 minutes for the best flavor, or serve immediately.
