Description

Chicken taquitos are a classic Mexican-inspired dish made with soft tortillas rolled around a creamy, cheesy chicken filling and fried until perfectly crispy. They are easy to prepare, incredibly flavorful, and ideal for busy weeknight dinners, parties, game days, or family gatherings. The combination of shredded chicken, melted cheese, cream cheese, spinach, and salsa creates a rich and satisfying filling that pairs perfectly with crunchy tortillas.


Ingredients

  • Vegetable or canola oil, for frying
  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups baby spinach, stems removed and chopped
  • 1½ cups shredded Colby Jack cheese or Mexican blend cheese
  • ½ cup salsa
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn tortillas or flour tortillas

  • Pico de gallo
  • Guacamole

Instructions

  1. Fill a saucepan with about ½ inch of vegetable or canola oil.
  2. Heat the oil over medium heat until it reaches 350°F.
  3. In a large mixing bowl, combine shredded chicken, softened cream cheese, chopped spinach, shredded cheese, salsa, and sour cream.
  4. Season the mixture with salt and pepper to taste.
  5. Place a few tablespoons of filling into the center of a tortilla.
  6. Spread the filling slightly and roll the tortilla tightly.
  7. Use tongs to place the taquito seam-side down into the hot oil.
  8. Fry for 2–3 minutes per side or until golden brown and crispy.
  9. Remove and place on paper towels to drain excess oil.
  10. Repeat with the remaining tortillas and filling.
  11. Serve warm with your favorite toppings and dipping sauces.
