Cheesy Hamburger Potato Casserole is a comforting, hearty dinner made with seasoned ground beef, tender sliced potatoes, creamy sauce, and plenty of melted cheese. It is an easy family-friendly meal that comes together in one baking dish and is perfect for busy weeknights.

Ingredients

  • 2 lbs. ground beef, 93% lean
  • 1 1/4 cups chopped onion
  • 3 cloves garlic, minced
  • 3 medium Russet potatoes, sliced into 1/4-inch rounds
  • 1 cup mozzarella cheese
  • 1 cup sharp cheddar cheese
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Cream Sauce

  • 1 cup milk, whole or plant-based
  • 1/2 cup beef broth
  • 3/4 cup Greek yogurt
  • 2 1/2 tablespoons butter
  • 2 1/2 tablespoons gluten-free all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat until browned and no longer pink. Drain all excess fat.
  3. Add the chopped onion and minced garlic. Cook for 2–3 minutes until the onion softens.
  4. Stir in Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper. Remove from heat.
  5. For the sauce, melt the butter in a saucepan over medium heat.
  6. Whisk in the flour and cook for 1–2 minutes to make a smooth roux.
  7. Gradually whisk in the milk and beef broth until smooth and thickened.
  8. Remove from heat and whisk in the Greek yogurt. Season with salt and pepper.
  9. Arrange half of the sliced potatoes in the prepared baking dish.
  10. Spread half of the beef mixture over the potatoes.
  11. Pour half of the cream sauce evenly over the beef.
  12. Repeat with the remaining potatoes, beef mixture, and cream sauce.
  13. Sprinkle the mozzarella and sharp cheddar over the top.
  14. Cover with aluminum foil and bake for 45–50 minutes, or until the potatoes are tender.
  15. Remove the foil and bake for another 10–15 minutes until the cheese is melted, bubbly, and lightly golden.
  16. Let the casserole rest for 5–10 minutes before serving.

Notes

  • Serve with a simple green salad, steamed broccoli, green beans, or roasted vegetables.
  • Add a spoonful of sour cream or Greek yogurt on top for extra creaminess.
  • Let the casserole rest before cutting so the layers hold together better.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
  • Reheat individual portions in the microwave or reheat the casserole covered in the oven.
  • The casserole can also be frozen in an airtight freezer-safe container for up to 2–3 months. Thaw overnight in the refrigerator before reheating.
