Description

Campfire Éclairs are a fun and delicious camping treat made with golden, flaky crescent-roll dough, creamy vanilla pudding, chocolate hazelnut spread, and whipped cream. They’re easy to prepare over a campfire and make a memorable dessert for family and friends.


Ingredients

  • 8-ounce package Pillsbury crescent rolls
  • 4.6-ounce box vanilla pudding, cook and serve
  • Nutella or chocolate frosting
  • Whipped cream
  • Vegetable oil, for brushing
  • Aluminum foil

Instructions

  1. Prepare the vanilla pudding ahead of time at home according to the package directions, then refrigerate until ready to use. You can also use ready-made pudding cups.
  2. Cut a piece of aluminum foil approximately 8 x 10 inches.
  3. Wrap the foil securely around the end of a roasting stick, leaving a smooth surface for the dough.
  4. Lightly brush the foil with vegetable oil to prevent the dough from sticking.
  5. Divide the crescent-roll dough into 8 equal portions along the precut lines.
  6. Starting with the wider end, wrap one piece of dough around the foil-covered end of the stick, slightly overlapping the dough as you go.
  7. Hold the dough-covered stick over the hot embers of a dying campfire.
  8. Slowly rotate the stick so the dough cooks evenly on all sides.
  9. Continue cooking for about 15 minutes, or until the dough is puffed and golden brown.
  10. Carefully remove the stick from the heat and allow the éclair to cool slightly.
  11. Gently remove the aluminum foil and carefully slide the éclair off the stick.
  12. Repeat with the remaining dough.
  13. Fill both open ends of each éclair with vanilla pudding.
  14. Drizzle Nutella over the top or spread with chocolate frosting.
  15. Add whipped cream to one end of each éclair.
  16. Serve and enjoy immediately.

Notes

  • Serve the éclairs immediately while the pastry is fresh and crisp.
  • Add whipped cream just before serving so it stays fluffy.
  • Set up a dessert station with pudding, Nutella, chocolate frosting, whipped cream, and toppings so everyone can customize their own éclair.
  • Keep prepared pudding refrigerated in a cooler until you are ready to fill the éclairs.
  • For camping, transport pudding and whipped cream in well-chilled containers.
  • Unfilled baked éclairs can be kept in an airtight container for a short time, although they are best enjoyed fresh.
  • Avoid filling the éclairs too far in advance because the pudding can soften the pastry.
  • Leftover filled éclairs should be refrigerated and enjoyed as soon as possible.
