Ingredients
- 3 large chicken breasts
- Salt and black pepper, to taste
- 1½ teaspoons garlic powder, divided
- ¼ teaspoon paprika
- 1 cup broccoli florets, finely chopped
- ½ cup red bell pepper, finely diced
- 1 cup mild cheddar cheese, shredded
- 1 tablespoon mayonnaise
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Season both sides of the chicken breasts with salt, black pepper, paprika, and ½ teaspoon of garlic powder.
- Using a sharp knife, carefully cut a pocket into the thickest side of each chicken breast without slicing all the way through.
- Place the chopped broccoli in a microwave-safe bowl with about 2 tablespoons of water. Cover and microwave for 1 minute, then drain thoroughly.
- Add the diced red bell pepper, shredded cheddar cheese, mayonnaise, remaining garlic powder, and salt and pepper to taste. Mix until well combined.
- Divide the broccoli cheese mixture evenly among the chicken breasts. Secure the openings with toothpicks if necessary.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Sear the stuffed chicken breasts for 3–4 minutes on each side until golden brown.
- Cover the skillet with foil and transfer it to the preheated oven. Bake for 15–17 minutes, or until the thickest part of each chicken breast reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest, covered, for 5 minutes before serving. Remove any toothpicks and serve warm.
