Ingredients

  • 2 medium zucchini
  • 2 large eggs
  • ½ cup grated parmesan cheese
  • ¼ cup almond flour
  • 1 teaspoon Italian seasoning
  • 1½ teaspoons dried parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Whisk eggs in a small bowl until fully combined.
  4. In a separate bowl, mix parmesan cheese, almond flour, Italian seasoning, parsley, salt, and pepper.
  5. Cut zucchini into evenly sized wedges or sticks.
  6. Dip each zucchini piece into the egg mixture, then coat well in the parmesan mixture.
  7. Arrange zucchini fries in a single layer on the baking sheet.
  8. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
  9. Remove from oven and serve warm with low-carb tomato sauce or preferred dip.
