Ingredients
For the Loaf
- 2 cups (250 g) all-purpose flour
- 1 ½ cups (300 g) granulated sugar
- 2 teaspoons baking powder
- 2 teaspoons apple pie spice
- ½ teaspoon kosher salt
- 1 ¼ cups apple cider or apple juice
- 1 large egg, room temperature
- 2 tablespoons unsalted butter, melted
- 1 tablespoon vanilla extract
For the Topping
- ¼ cup apple cider
- ½ cup (100 g) granulated sugar
- 2 teaspoons apple pie spice
Instructions
- Preheat the oven to 350°F and spray an 8 ½ x 4 ½-inch loaf pan with nonstick cooking spray.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, apple pie spice, and kosher salt.
- In a separate bowl, whisk the apple cider, egg, melted butter, and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients.
- Stir gently until just combined. Avoid overmixing because the batter should remain slightly runny.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 65 to 75 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is golden brown.
- Remove the bread from the oven and allow it to cool in the pan for about 10 minutes.
- While the bread is still warm, pour the ¼ cup apple cider evenly over the loaf.
- In a small bowl, combine the granulated sugar and apple pie spice.
- Carefully remove the bread from the pan and place it on parchment paper.
- Sprinkle the sugar and spice mixture evenly over the loaf, rotating it as needed to coat the sides.
- Let the bread cool completely before slicing and serving.
Notes
- Serve the bread at room temperature or slightly warm for the best apple cider flavor.
- Slice it thickly and serve with butter, cream cheese, or apple butter.
- Pair it with coffee, tea, hot chocolate, or warm apple cider for a cozy fall breakfast.
- For dessert, serve slices with vanilla ice cream and a drizzle of caramel sauce.
- Store leftover bread in an airtight container at room temperature for up to 3 days.
- For longer storage, refrigerate the bread in a tightly covered container for up to 5 days.
- Allow refrigerated slices to come to room temperature or warm them briefly before serving.
- To freeze, wrap the completely cooled loaf tightly in plastic wrap and place it in a freezer-safe bag.
- Freeze for up to 2 to 3 months. Thaw overnight in the refrigerator before serving.
- For individual portions, slice the bread before freezing and separate the slices with parchment paper.
