Ingredients

  • 2 large egg whites (unbeaten)
  • 1 ½ cups granulated sugar
  • ⅓ cup cold water
  • ¼ teaspoon cream of tartar (or 1 teaspoon corn syrup)
  • 1 teaspoon vanilla extract

Instructions

Step 1: Combine Ingredients

  • In the top of a double boiler, combine the egg whites, granulated sugar, cold water, and cream of tartar. Mix thoroughly to ensure all ingredients are well blended.

Step 2: Heat and Beat

  • Place the double boiler over boiling water. Beat the mixture constantly until it holds a peak. This process will take at least 7 minutes, though it may take closer to 10 minutes for the frosting to reach the desired consistency.

Step 3: Add Vanilla

  • Once the frosting has thickened, remove it from the heat. Add the vanilla extract and continue to beat until the frosting is thick enough to spread easily.

  • This recipe makes 5-6 cups of frosting, enough to generously frost a large cake or several cupcakes.
