Ingredients

  • 1 cup (220 g) full-fat cottage cheese, preferably small curd
  • 2 large eggs, room temperature
  • ⅔ cup (60 g) oat flour or ⅔ cup (64 g) almond flour for a low-carb version
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 12 tablespoons honey or maple syrup (optional)
  • ½ cup (70 g) fresh blueberries
  • Pinch of salt
  • Butter or cooking spray for greasing the skillet

Instructions

  1. Drain any excess liquid from the cottage cheese if it is watery.
  2. Add the cottage cheese, eggs, oat flour or almond flour, baking powder, vanilla, lemon zest, honey or maple syrup, and salt to a blender.
  3. Blend for 20–30 seconds until the batter is smooth without overmixing.
  4. If the batter is too thin, stir in one tablespoon of oat flour at a time until thick enough to scoop.
  5. Fold the blueberries gently into the batter using a spatula.
  6. Heat a lightly greased non-stick skillet over medium heat.
  7. Scoop about 2 tablespoons of batter for each pancake bite.
  8. Cook for 3–4 minutes until the bottoms are golden and the edges begin to set.
  9. Flip carefully and cook another 2–3 minutes until fully cooked.
  10. Serve warm with Greek yogurt, maple syrup, honey, fresh blueberries, or powdered sugar if desired.
