Description

Zucchini fritters are an easy and delicious way to get more vegetables into your meals. These fritters are coated in a flavorful taco seasoning breadcrumb mixture and baked until golden and crispy. They’re perfect as a snack, appetizer, or side dish and come with a creamy salsa dipping sauce that makes them irresistible. Ready in just 30 minutes, they’re a healthy and family-friendly option everyone will enjoy.


Ingredients

  • 2 small zucchini
  • 1/4 cup buttermilk
  • 1 whole egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 2 tablespoons taco seasoning

For the Dipping Sauce

  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup ranch dressing


Instructions

  1. Preheat oven to 400º F. Place a wire rack over a baking sheet and spray with non-stick cooking spray.
  2. Slice zucchini into 1/4 inch thick slices.
  3. In a bowl, combine buttermilk and beaten egg.
  4. In another bowl, mix panko breadcrumbs, plain breadcrumbs, and taco seasoning.
  5. Dip each zucchini slice into the egg mixture, then coat with the breadcrumb mixture.
  6. Arrange the coated zucchini slices on the prepared baking sheet.
  7. Bake for 20 minutes, or until golden brown and crispy.
  8. While baking, mix together sour cream, salsa, and ranch dressing to make the dipping sauce. Keep refrigerated until serving.
  9. Remove fritters from oven and serve immediately with the creamy dipping sauce.
