- 1 can Green Chilies (small can)
- 1 can Enchilada Sauce
- 2 ounces Cream Cheese
- 1 bag Fritos Corn Chips
- 1 bag Shredded Cheese
- 3⁄4 cup Lettuce, shredded
- 1⁄2 cup Tomato, fresh, diced
- 16 ounces Salsa
- 8 ounces Sour Cream
Instructions
- Brown the Ground Beef and Onion
Start by browning 1 1⁄2 pounds of ground beef in a skillet over medium heat. Add the chopped onion and cook until the onion is soft and translucent. - Add the Green Chilies, Enchilada Sauce, and Cream Cheese
Stir in the green chilies, enchilada sauce, and cream cheese. Cook until the cream cheese is fully melted and the mixture is well combined. - Layer the Casserole
In a 9×13-inch baking dish, start by spreading a layer of Fritos corn chips at the bottom. Add a layer of the beef mixture over the chips, then sprinkle a generous amount of shredded cheese on top. Repeat the layers until all the ingredients are used, ending with a layer of shredded cheese. - Bake the Casserole
Preheat your oven to 350°F (175°C). Bake the casserole for 15-20 minutes or until the cheese is melted and bubbly. - Top and Serve
Once baked, remove the casserole from the oven and let it cool slightly. Top individual servings with shredded lettuce, diced tomatoes, salsa, and sour cream as desired.
Notes
Serving Tips
- Serve Hot and Fresh: Walking Taco Casserole is best enjoyed straight out of the oven when the cheese is melted and bubbly. Let it cool for a few minutes before serving to allow the layers to set slightly.
- Customizable Toppings: Set up a toppings bar with shredded lettuce, diced tomatoes, salsa, sour cream, guacamole, and jalapeños. This allows everyone to customize their servings to their liking, adding a personal touch to each plate.
- Pair with Side Dishes: Complement this casserole with side dishes like Mexican rice, refried beans, or a fresh green salad. These sides balance out the rich flavors of the casserole and create a complete meal.
- Ideal for Parties: Walking Taco Casserole is perfect for feeding a crowd. Consider serving it in individual bowls or plates with toppings on the side, making it easy for guests to assemble their own “walking taco.”
Storage Tips
- Refrigerating Leftovers: If you have any leftovers, allow the casserole to cool completely before storing. Transfer the leftovers to an airtight container and refrigerate. It will keep well in the fridge for up to 3-4 days.
- Reheating Instructions: To reheat, place a portion of the casserole in a microwave-safe dish and microwave on high for 1-2 minutes or until heated through. Alternatively, you can reheat the entire casserole in the oven at 350°F (175°C) for about 15 minutes or until warm.
- Freezing for Later: Walking Taco Casserole can also be frozen for longer storage. After baking and cooling, wrap the casserole tightly in plastic wrap and then in aluminum foil. Store it in the freezer for up to 2 months. When ready to eat, thaw it in the refrigerator overnight and reheat in the oven.
- Avoid Soggy Chips: To prevent the Fritos from becoming too soggy, consider storing them separately if you anticipate leftovers. When reheating, add fresh chips for an added crunch.
These serving and storage tips will help you enjoy your Walking Taco Casserole to the fullest, whether you’re serving it fresh or savoring the leftovers!
