Ingredients
- 1 avocado, mashed
- 1 teaspoon lemon juice
- Β½ teaspoon salt
- 4 slices bread (whole grain or sourdough)
- 4 slices Colby Jack cheese
- 1 Roma tomato, sliced
- 1 tablespoon unsalted butter, softened
Instructions
- In a small bowl, mix mashed avocado with lemon juice and salt
- Butter one side of each bread slice
- Place bread slices together with buttered sides facing inward
- Build sandwich on the non-buttered side
- Add 1 slice of cheese, tomato slices, mashed avocado, then another slice of cheese
- Repeat for second sandwich
- Heat pan or panini maker over medium-low heat
- Place sandwich in pan and top with second bread slice (buttered side up)
- Cook until bottom is golden brown, then flip
