Ingredients

  • 1 avocado, mashed
  • 1 teaspoon lemon juice
  • Β½ teaspoon salt
  • 4 slices bread (whole grain or sourdough)
  • 4 slices Colby Jack cheese
  • 1 Roma tomato, sliced
  • 1 tablespoon unsalted butter, softened

Instructions

  1. In a small bowl, mix mashed avocado with lemon juice and salt
  2. Butter one side of each bread slice
  3. Place bread slices together with buttered sides facing inward
  4. Build sandwich on the non-buttered side
  5. Add 1 slice of cheese, tomato slices, mashed avocado, then another slice of cheese
  6. Repeat for second sandwich
  7. Heat pan or panini maker over medium-low heat
  8. Place sandwich in pan and top with second bread slice (buttered side up)
  9. Cook until bottom is golden brown, then flip
  10. Grill until both sides are golden and cheese is melted
  11. Remove from pan and repeat for second sandwich
