Ingredients

For the Cupcakes:

  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup espresso or strong brewed coffee, cooled

For the Coffee Soak:

  • 1/2 cup espresso or strong brewed coffee
  • 2 tablespoons coffee liqueur (optional)

For the Mascarpone Frosting:

  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Garnish:

  • Cocoa powder
  • Chocolate curls or grated chocolate

 

 


Instructions

1. Prepare the Cupcakes:

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, cream together the granulated sugar and softened butter until the mixture is light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • Stir in the sour cream and cooled espresso, mixing until just combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until the batter is smooth and well combined.
  • Fill the cupcake liners about 3/4 full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack.

2. Make the Coffee Soak:

  • In a small bowl, combine the espresso and coffee liqueur (if using).
  • Once the cupcakes are completely cool, pierce the tops of each one several times with a fork.
  • Generously brush the coffee soak over each cupcake, allowing the liquid to seep into the cake for that classic tiramisu flavor.

3. Prepare the Mascarpone Frosting:

  • In a large bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  • In another bowl, whip the heavy whipping cream to stiff peaks.
  • Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate the cream. The result should be a light and fluffy frosting.

4. Decorate and Serve:

  • Using a piping bag or a spatula, frost each cupcake with the mascarpone frosting.
  • Lightly dust the tops with cocoa powder and garnish with chocolate curls or grated chocolate for an elegant finish.
  • Serve immediately or refrigerate until ready to serve.
