Ingredients

The Cone and Crumble:

  • 12 sugar cones
  • 20 vanilla Oreos, crushed
  • 8 tbsp butter

The Filling:

  • 16 oz cream cheese
  • ½ cup sugar
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 8 oz cool whip

The Strawberries:

  • 1 lb strawberries (fresh or frozen)
  • ½ cup sugar
  • ¼ cup lemon juice
  • ¼ cup corn starch
  • 2 tbsp water

The Glaze:

  • 2 cups powdered sugar
  • 5 tbsp milk
  • ½ tsp vanilla extract

Instructions

Step 1: Prepare the Crumble
Start by finely crushing the vanilla Oreos in a food processor. Melt the butter and mix it with the crushed Oreos, then pulse to combine. Spread the mixture into a baking dish and bake at 375°F for 5 minutes. Remove from the oven and mix in a package of strawberry Jell-O for a burst of flavor and color.

Step 2: Make the Cheesecake Filling
In a large mixing bowl, add 16 ounces of cream cheese and beat on high until it becomes light and fluffy. Once the cream cheese is fluffed, add ½ cup sugar, 2 tablespoons powdered sugar, and 1 teaspoon vanilla extract. Mix everything together until smooth and well combined. Finally, fold in 8 ounces of cool whip and mix again until the filling is smooth and creamy.

Step 3: Prepare the Strawberries
You have two options for incorporating strawberries into your cheesecake cones:

  • Option 1: Fresh Strawberries: Wash, hull, and slice the strawberries. Place them in a bowl and sprinkle with sugar. Let them sit for a few minutes to draw out the natural juices.
  • Option 2: Strawberry Glaze: Place the strawberries in a saucepan over medium heat. Add ½ cup sugar, ¼ cup lemon juice, 2 tablespoons water, and ¼ cup corn starch. Stir constantly as the mixture heats and thickens. Once thickened, remove from heat and let it cool.

Step 4: Make the Glaze
In a medium-sized bowl, combine 2 cups of powdered sugar, 5 tablespoons of milk, and ½ teaspoon vanilla extract. Mix until smooth and well combined.

Step 5: Assemble the Cones
Dip the tops of the sugar cones into the glaze, ensuring they’re well-coated. Then, roll each cone in the Oreo crumble mixture until evenly covered. Place the cones on a cookie sheet and let them dry.

Once the cones are dry, fill them with the cheesecake filling using a piping bag. Top with your choice of strawberries—either the fresh slices or the strawberry glaze. Finally, drizzle more glaze over the entire cone for an extra touch of sweetness.
